Hi and welcome to The Thoughtful Kitchen! My name is Annalyce and I am a Culinary Wellness Educator and Natural Food Chef. I am passionate about all things food, especially the connection between real food and your well-being. I am a firm believer that many health issues can be resolved with a mindful diet high in nutrient-dense vegetables, fruits, healthful fats and quality proteins.
I do not believe in deprivation, calorie counting or fad diets, but eating satisfying and delicious home cooked meals from whole and health-supportive foods. Home cooking is an incredibly important life skill and learning a few simple techniques will allow you to make long term improvements in your overall health.
My experience with health-supportive cooking began when I was diagnosed with a gluten intolerance, before the term "gluten free" existed. I adjusted my diet and after years of eating fresh and minimally processed foods, I healed my gut and discovered the healing powers of food. I also realized my passion for cooking for wellness, especially once I became a mother. I was focused on giving my children the best start through fresh and nutrient dense foods and became more aware of how important quality food is for our health. My youngest daughter had been placed on a highly restrictive elimination diet for eczema and for the better part of a year I spent my time cooking foods and concocting recipes that were delicious, nutritious and kid approved. That experience made me realize how incredibly harrowing food allergies and intolerances can be and I realized how my skills and passion for food can help those suffering from restrictive diets.
I am a proud graduate of the Natural Gourmet Institute Chef Training Program and gained experience in the kitchen of the award-winning restaurant Dirt Candy in New York City. My culinary focus is on whole, organic, fresh and unprocessed ingredients. I work with plant based proteins, pastured and grass-fed meats and wild caught seafood, as well as fresh produce and whole grains. I am experienced in vegetarian, vegan, gluten free and dairy free cuisine and specialize in creating dishes with alternative components.
